By Angela DreyfussFor the ultimate dinner party dish, here’s an easy, 4-ingredient, meat sauce and chicken recipe.
Meat Sauce for Meatballs1 cup shredded sharp cheddar cheese2 cups shredded sharp Cheddar cheese 2 tbsp fresh herbs such as thyme, oregano, sage, basil or rosemary 1 tsp freshly ground black pepper2 tbsp freshly ground cumin1 tsp salt1 cup chopped red onions (or red pepper flakes)1 tsp ground coriander1 cup diced tomatoes (or green beans)1 tbsp fresh parsley1 tbsp freshly grated Parmesan cheese (or Parmesan, plus more for garnish)Preheat oven to 400 degrees F.
Combine shredded cheddar and cheddar cheeses, herbs, spices, and salt in a medium bowl.
Mix well and set aside.
In a small bowl, combine all ingredients except for the Parmesan.
Combine Parmesan with shredded cilantro, salt, pepper, garlic powder, rosemary, thyme and oreganos and set to medium heat in a large saucepan.
Stir to combine and bring to a simmer.
Cook, stirring frequently, for 10 minutes.
Remove from heat and stir in diced tomatoes, parsley, cilantro and remaining Parmesan mixture.
Stir occasionally until tomatoes are reduced to about 1/4 cup.
Add chicken and mix well.
Pour sauce over chicken, then drizzle with remaining Parm.
Garnish with chopped red onion.
Recipe Notes I prefer using a slow cooker as the sauce cooks longer, so I can have a few bites at a time instead of just one big bite.
I have used it to make my famous meatballs.
If you are trying to make the meatballs at home, be sure to use the slow cooker recipe, but don’t forget to cook the chicken in the oven instead of the stovetop.
You can also try to cook it on the stove top and use a heavy skillet instead of a small one.
I like to leave the chicken completely exposed, which makes the meaty chicken easier to peel off the chicken.
