Author: The Hill recipe type: Sauce Serves: 4 Ingredients 3 pounds ground pork, rinsed and cleaned 1 cup vegetable oil, divided 1/2 cup tomato paste 1 tablespoon garlic powder 1 tablespoon kosher salt 1 tablespoon red pepper flakes 1/4 cup minced fresh cilantro (optional) 1/8 cup minced garlic (optional – use as a garnish) 1 tablespoon dried oregano 1/16 teaspoon ground turmeric 1/6 teaspoon dried cumin 1/3 cup chicken broth, or stock Instructions Combine all ingredients in a small bowl.
Add the chicken to the pot and cook on low for about 2 hours or until the meat is tender and the bones are browned.
Remove the bones and skin from the bones, if desired.
Let the meat cool to room temperature.
Meanwhile, heat the vegetable oil in a large skillet over medium heat.
Add garlic and cook until fragrant.
Add in tomatoes and sauté until the tomatoes turn red and fragrant, about 5 minutes.
Add spices and cook for about another 5 minutes, until fragranced.
Add beef and cook another minute, stirring frequently.
Add cilantro, cumin, salt and pepper and cook, stirring often, for another minute.
Add chicken and let cook for 5 minutes on high.
Add salt and turmeric and cook a few minutes more.
Add tomatoes, meat sauce and spices and mix well.
Serve immediately, garnished with fresh cheddar, parsley and/or cilantro. 3.5.3208
